Lets Make Some Waffles


I never knew how many different ways there was to serve waffles. It’s just uncanny like everything from desserts to sandwiches, cream filled and in fries. Made with oatmeal, pecans, buttermilk, gingerbread and potatoes, it just goes on and on and you can find them all on tasteofhome.com.
Then of course there’s the Belgian Waffles with their wonderful light, crispy texture… that was always my favorite.
Here’s the real deal recipe straight from Belgian courtesy of Rose Delemeester, MI. where she visited her husband’s relatives. They use a cup of butter, whip the egg whites and fold them in at the end. That’s what I’m talkin about!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3-1/2 teaspoons baking powder
  • 2 eggs, separated
  • 1-1/2 cups milk
  • 1 cup butter, melted
  • 1 teaspoon vanilla extract
  • Sliced fresh strawberries or syrup

Directions

  • In a bowl, combine flour, sugar and baking powder. In another bowl,
  • lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir
  • into dry ingredients just until combined. Beat egg whites until
  • stiff peaks form; fold into batter.
  • Bake in a preheated waffle iron according to manufacturer’s
  • directions until golden brown. Serve with strawberries or syrup.
  • Yield: 10 waffles (about 4-1/2 inches).
Nutritional Facts: 1 serving (2 each) equals 696 calories, 41 g fat (25 g saturated fat), 193 mg cholesterol, 712 mg sodium, 72 g carbohydrate, 1 g fiber, 10 g protein.

Now here’s a really great way to pre-mix all the dry ingredients ahead in this heart healthy version using ½ whole wheat flour. You just mix in the liquid ingredients to 1 1/3 Cups of the dry mix and your WAY ahead of the game. I like to also make this mix to give away for gifts in a pretty cloth bag. Just add the recipe folded nicely and you’re ready to go!

Ingredients

  • 4-1/2 cups all-purpose flour
  • 3 cups whole wheat flour
  • 2/3 cup sugar
  • 1/4 cup baking powder
  • 1 tablespoon apple pie spice
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ADDITIONAL INGREDIENTS:
  • 1 cup 2% milk
  • 1 egg
  • 2 tablespoons canola oil

Directions

  • In a large bowl, combine the first seven ingredients. Store in an
  • airtight container for up to 2 months. Yield: 6 batches (1-1/3 cups
  • each).
  • To prepare waffles: Place 1-1/3 cups waffle mix in a large bowl. In
  • another bowl, whisk the milk, egg and oil. Stir into dry ingredients
  • just until moistened.
  • Bake in a preheated waffle iron according to manufacturer’s
  • directions until golden brown. Yield: 6 waffles per batch.
