My favorite food – Chocolate!

Hello, my name is Karen Davis, and my favorite food is CHOCOLATE. Yes, I admit it. I am a chocoholic! I’ve always had a sweet tooth, and I love cookies, candy, cakes, and brownies. In the past I’ve gone through fazes where I decided I was going to give up chocolate.

During these crazy attempts, I stop making desserts and try to convince myself that fresh fruit is just as good. Don’t get me wrong – I like fruit (and vegetables, too, for that matter).

But, invariably, after a few days of living in a chocolate-free zone, I find myself digging through our pantry and creating makeshift desserts out of chocolate chips sandwiched between graham crackers and warmed in the microwave just until the chocolate is all gooey and melted.

I’ve learned that the key for me is moderation. And, if eating chocolate is wrong I don’t want to be right! For all those fellow chocolate lovers, I want to share some of my favorite chocolate recipes from Taste of Home.

One go-to recipe in our house is Chocolate Sheet Cake. It is a winner for potlucks, family gatherings, and neighborhood parties. I make mine without the chopped walnuts on top so it works for the kids, too. But, it is delicious either way.

CHOCOLATE SHEET CAKE: The biggest compliment I've ever gotten on this cake might have come when I baked it for my son's 11th birthday party last fall. The children were full after eating pizza, veggies and dip, etc. - but each of them asked for seconds! -Dianne Medwid, Dauphin, Manitoba

Chocolate Mint Candy is a great recipe for those who want a quick chocolate bite after a meal. You can keep the candy squares in the refrigerator for a cool, refreshing treat. Adjust the amount of peppermint extract to suit your family’s taste.

Finally, if you want a dessert that works well for serving singles or couples, try Lava Chocolate Cakes. The recipe makes four servings, but you can divide it in half to make two. Experiment with the baking time in your oven to achieve the signature “lava” cake soft centers.

LAVA CHOCOLATE CAKES: True decadence at its best, this rich chocolate cake created by the Taste of Home Cooking School features a warm, gooey chocolate center that oozes out onto the dessert plate. Whether you enjoy it garnished with a dollop of whipped cream or sprinkled with confectioners' sugar, you'll want to lick the plate clean!

I hope you enjoy these. Now, it’s time to turn my oven on and make some brownies!

  1. ok…you asked what we liked…here you go…Take a spoon of peanut butter and wash it down with coffee ( I drink it black) It’s that taste I would love, love, love in a cookie or cake. a little chocolate would’t hurt …LOL

    • Thanks so much, Ellen! I appreciate you taking time to stop by the blog. I love your comment about the peanut butter and coffee. It sounds like a creative start to a recipe idea. We’ll have to work on that! :)
