Fall- I love this time of year! The weather is cooling down, leaves are changing, holidays are on the way and soon we will have snow. Yea! You would think with all the traveling I do for Taste of Home that I wouldn’t like the snow, but I always have. I especially like to take a walk in the evening while it is snowing, it just seems so peaceful.

HERBED PORK ROAST RECIPE: This favorite recipe was one of my dear mother’s, and each time I serve it, I’m filled with warm memories. This was our family’s celebration roast. Mother served it on birthdays and holidays. The combination of herbs enhances the drippings as well, so I use it to make a flavorful gravy. -Ruth Bethurum, Ozan, Arkansas
As a child I always knew that fall was when my mother would change the menu for Sunday dinner. During the summer we would have rotisserie chicken, baked potato and salad, once the weather began to change so did the menu; to pork roast, gravy and spaetzle. There were many different meals, but this one I remember the most. I always enjoyed the change and loved the gravy over the spaetzle.
The spaetzle were great, although they did sit in your stomach for a while. I was never quite able to create the same meal but I found a recipe that comes close to my mom’s pork roast, along with this spaetzle recipe. So every once in a while I will make this during the winter months when the wind is blowing and the snow is snowing.
