Well, its half way through the summer and I have already visited a variety of festivals in the area with my clog dance group. This past weekend we performed at The Corn Festival in Strasburg, Ohio- one of my favorites, with plenty of hot roasted corn to go around. Add a little (or a lot) of butter and salt and it is a meal all by its self. Of course, just one ear of corn won’t do, more like three or four and with all that dancing we certainly kicked up an appetite! I think maybe next year I will join the corn eating contest and see how many ears of corn I can eat in four minutes.
Since everyone in my family enjoys the flavor of roasted corn, I thought; why not make it at home. Looking for different ideas and flavors to add to the roasted corn I found this recipe that will be a great addition to the cookouts for the rest of the summer, especially Labor Day weekend:
I also like to use the flavors of the roasted corn in salads and side dishes so this recipe looked very tasty also:
