Pina Colada Zucchini Bread


Are you growing zucchini in your garden this summer? I find that when people do, they tend to produce one quantity – A LOT! Today I have a fun summer recipe to help you enjoy your zucchini.

This creative zucchini bread recipe came to me through a recommendation from a friend. That’s my preferred way to hear about a recipe – especially when it’s a favorite from Taste of Home. I know it’s bound to be a “keeper” that I make again and again

My friend who shared this recipe is Debbie Johnson from the Jefferson City, Missouri area. She works at Farm Bureau, is one of our Taste of Home field editors, and a wonderful ambassador for Taste of Home! I had the pleasure of working alongside Debbie at two cooking schools this spring.

While casually chatting one morning as we prepped food for the cooking school, our conversation turned to our favorite Taste of Home recipes. Debbie mentioned how much she loves the Pina Colada Zucchini Bread. My ears immediately perked up.

I’m always looking for new ways to incorporate zucchini from the garden. Debbie mentioned that this recipe is always a “hit” with her family and friends. She likes the flavors the various extracts lend to the bread. You get a nice hint of coconut without the coconut texture (for those who don’t care for the texture).
